Tasty Rum Cake with Sweet Prune Topping

 

Rum Cake with Sweet prune topping

This cake is for the prune and rum lovers 

Ingredients

Rum Cake

  • 5 eggs
  • 150 gr sugar
  • 225 gr butter or two sticks
  • 250 gr flour
  • a bit baking powder
  • a bit vanille
  • a bit rum (own choice, i use borgoe) or a lot

Prune topping

  • 100 gr powder sugar
  • 3 tblsp rum (own choice, i use borgoe)
  • 150 gr prunes cut into pieces

Instructions

For the Cake

  1. Mix the eggs together with the sugar until the sugar is disolved
    Add the butter and vanilla and mix until buter is wel blended in the mixture
    Add the flour with baking powder and mix until creamy


  2. Pour some rum into to cake batter and mix with a spoon (you can put as much as you like, i find 3 tblsp nice enough)

For the topping

  1. Put the rum in a pan on a soft fire
    Add the powder sugar and prunes
    mix until the powder sugar is disolved

  2. Turn of fire and put topping on cooled cake

It was my mom’s birthday yesterday. She asked me to bake her a rum cake with my signature sweet prune topping.
